Easy 6-Ingredient Mixed Nut Energy Bites

These mixed nut energy bites are here to stay! They’re the perfect afternoon snack that’s not only delicious but will give you all the energy you need to conquer the rest of your work or study day. They’re also great as a small breakfast when you’re not particularly hungry or as a snack on a hike.

These energy bites are made in under 15 minutes and with only 6 ingredients. For the nuts, I used almonds, cashews and peanut butter. Feel free to swap the nuts for different ones if you don’t like one of them or have an allergy, however I recommend using one nut in nut butter form to help with the consistency of the bites.

While the dates add sweetness, the toasted desiccated coconut adds a lovely flavour and texture to them. Little side note, did you know that coconut is botanically considered a drupe and not a nut? You learn something new every day…

Ingredients
  

  • 50 g desiccated coconut
  • 120 g dates
  • 100 g almonds
  • 50 g cashews
  • 50 g peanut butter
  • 1/4 tsp vanilla bean paste

Instructions
 

  • Preheat the oven to 160°C grill.
  • Add the desiccated coconut to baking tray lined with baking paper.
    Toast the coconut for 3-4 minutes until golden brown. Make sure to keep a close eye on it, the coconut goes from golden and toasty to burnt really quickly!
  • Pit the dates and add them to a food processor together with the almonds and cashews. Pulse until the mixture comes together.
    Tip: If the dates feel dry, soak them in water for a few minutes before adding them to the food processor
  • Transfer the mixture from the food processor into a bowl.
  • Add the peanut butter, vanilla bean paste and 30g of toasted coconut and mix everything together until combined.
  • Place the rest of the coconut onto a plate.
  • Take out a tablespoon at a time and roll the mixture into balls. Then, roll the balls in the desiccated coconut on the plate.
  • Store the energy bites in the fridge for up to 1 week.
