This cucumber salad is super refreshing and incredibly easy to make. It’s a fantastic side salad, whether you’re having a BBQ or dinner party. Plus, the salad is made in under 10 minutes and uses only 7 ingredients.
The cucumber is coated in a delicious verjuice and extra virgin olive oil dressing while the mint and dill add freshness. And of course, any good cucumber salad has a dash of salt that brings out the subtle flavours of this vegetable (which is botanically considered a fruit!).
In this recipe, the cucumbers are very thinly sliced. I usually slice them with a mandolin* as I can achieve very thin and even slices. Plus, it’s faster to do it that way. If you have a mandolin, I recommend using it, however, please be careful. They’re very sharp tools and you can cut yourself quite badly with them. Trust me, I speak from experience… On the other hand, if you don’t have a mandolin or if you feel uncomfortable using one, then you can always slice your cucumber with your good ol’ trusty chef’s knife.

Easy Cucumber Salad with Mint and Dill

Ingredients
- 300 g cucumber
- 3 tsp verjuice
- 3 tsp extra virgin olive oil
- 1 handful dill leaves
- 1 handful mint leaves
- salt and pepper to taste
Instructions
- Thinly slice the cucumber with a mandolin or knife. Add the cucumber slices into a salad bowl.
- Add the verjuice, olive oil, dill and mint leaves into the bowl. Mix with the cucumber until combined.
- Season the salad with salt and pepper to your liking. Mix the salad once more and enjoy.
