These green beans with garlic and lemon make a great side dish and are absolutely delicious. I could easily eat an entire plate by myself for a snack. They’re crunchy, zesty (thanks to the lemon!) and of course garlicky – who would have thought!
The beans are cooked in under 10 minutes and you only need 5 ingredients. The recipe is super simple. This dish is great for serving alongside a main such as this whole roasted cauliflower or this mushroom-leek pie. However, as I mentioned above, you can also just eat the beans as a snack if that’s your cup of tea.
Because there are so few ingredients in this recipe, I highly recommend using the best quality produce you can find. Don’t underestimate how much the quality of your ingredients will influence the quality and taste of your cooking. This is especially true in instances like this, when you are using only a few ingredients and there is little processing or cooking involved.

Green Beans with Garlic and Lemon

Ingredients
- 200 g fresh green beans
- 3 cloves garlic
- 1/2 tbsp olive oil
- 1 pinch flaky salt
- 1/2 tsp lemon zest
Instructions
- Remove the tips of the green beans on each end.
- Thinly slice the garlic.
- Heat up a pan and add the olive oil, beans and garlic. Fry for about 6 minutes on medium heat until the beans are slightly caramelised but still green and the garlic chips are crunchy.
- Once the beans are cooked, season them with salt and serve them with fresh lemon zest.
